The Garden of Vyn

We aim to sustain our kitchen with as many greens and herbs as possible—right here on site—complementing the wide array of seasonal produce we source from dedicated local growers. This ensures every ingredient arrives at the perfect moment to enrich our menu.

How we grow

Since Vyn’s beginnings, the green spaces have been a central part of the site—cultivated with the intention to nourish both plate and mind. A naturalistic approach to planting sets the tone for the aesthetic, drawing inspiration from the local biotope—grasses that sway and ripple, nodding to the reeds at the water’s edge.

Organic shapes and delicate, towering stems contrast with the buildings’ clean, steady lines. The palette moves from lush greens to bursts of white, punctuated by the occasional splash of color. At its core lies a vision of calm—landscapes that offer something to the senses year-round, with perennials and plants chosen to withstand the winds and the nearness of the sea.

What grows from the soil is shaped by the soil. Soil matters, and we treat ours as the vibrant, living ecosystem it is—cultivating and weeding primarily by hand, as far as time and prospect allow, so as not to disturb the delicate subterranean life that enriches it.

With our own compost, crop rotation, and happy pollinators, we let the garden grow in tandem with our long-term vision. On that note: in spring 2025, we welcomed around 15,000 winged neighbors to the hill, into a beehive of their very own.
